This Southwest Chicken Marinade recipe offers a flavorful blend of chili powder, cumin, garlic, and lime that infuses boneless, skinless chicken breasts with bold, zesty flavors. Perfectly grilled to juicy perfection, this dish is ideal for a quick and delicious meal with a spicy southwestern twist.

Ingredients

Scale

Chicken

  • 2 pounds boneless, skinless chicken breast (thin or butterflied)

Marinade & Seasoning

  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (pressed)
  • ½ teaspoon ground pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 tablespoon fresh lime juice (about 1 lime)
  • 2 tablespoons vegetable oil

Instructions

  1. Prepare the Southwest Seasoning: In a small bowl, stir together the chili powder, cumin, garlic powder, salt, ground pepper, and optional cayenne pepper to create the southwest seasoning mix.
  2. Marinate the Chicken: Poke the chicken breasts all over with a fork to help the marinade penetrate. Place the chicken in a dish or a zip-top bag, then pour the seasoning over both sides of the chicken. Add the fresh lime juice and vegetable oil, tossing or massaging the mixture to coat all pieces evenly. Refrigerate for at least 20 minutes and up to 4 hours to let the flavors meld.
  3. Preheat and Prepare the Grill: Heat your grill to medium heat and brush the grates with oil to prevent sticking. This prepares the grill for even cooking and perfect grill marks.
  4. Grill the Chicken: Place the marinated chicken on the grill. Cook each side for 4-6 minutes, depending on thickness, until the internal temperature reaches 165°F (75°C), ensuring the chicken is safely cooked and juicy.
  5. Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes. This resting time allows the juices to redistribute. Serve the chicken warm and enjoy!

Notes

  • For extra flavor, marinate the chicken overnight but do not exceed 24 hours to avoid texture changes.
  • Use a meat thermometer to ensure chicken reaches safe internal temperature.
  • Optional cayenne pepper can be omitted or adjusted to control heat level.
  • Butterflying thick chicken breasts ensures even grilling.
  • Serve with fresh salsa, guacamole, or a side salad for a complete meal.
