Salad Ingredients
- 2 cups cooked chicken, diced or shredded
- 4 cups lettuce, chopped
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels, fresh or thawed if frozen
- 1 cup tomatoes, diced
Dressing
- 1/2 cup southwest dressing (store-bought or homemade)
- Prepare the Ingredients: Make sure the chicken is cooked and cut into bite-sized pieces. Wash and chop the lettuce, rinse and drain the black beans, and dice the tomatoes. If using frozen corn, thaw it before adding.
- Combine Salad Components: In a large mixing bowl, add the cooked chicken, chopped lettuce, black beans, corn kernels, and diced tomatoes. Gently toss these ingredients together until well combined.
- Toss with Dressing: Pour the southwest dressing over the mixed salad. Toss everything gently but thoroughly to ensure all ingredients are evenly coated with the flavorful dressing.
- Serve: Transfer the dressed salad into individual serving bowls or plates and enjoy immediately for the freshest taste and texture.
Notes
- For added crunch, top the salad with tortilla strips or crushed tortilla chips.
- To make the salad spicier, add diced jalapeños or a sprinkle of chili powder.
- You can substitute grilled chicken breast for a smoky flavor.
- Use a low-fat or homemade southwest dressing to reduce calories.
- This salad can be prepared ahead but add the dressing just before serving to keep lettuce crisp.
