Vegetables
- 4 large bell peppers, tops cut off and seeds removed
- 2 cups fresh spinach, chopped
Dairy
- 1 cup ricotta cheese
- 1 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan cheese
Other
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil (optional, for sautéing spinach)
- Prepare the Peppers: Preheat your oven to 375°F (190°C). Carefully cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- Prepare the Filling: In a skillet, heat olive oil over medium heat (optional). Add chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let cool slightly. In a mixing bowl, combine the ricotta cheese, sautéed spinach, half of the shredded cheese, Parmesan cheese, salt, and black pepper. Mix well to combine.
- Stuff the Peppers: Spoon the ricotta and spinach mixture evenly into each hollow bell pepper until filled.
- Bake: Arrange the stuffed peppers upright in a baking dish. Sprinkle the remaining shredded cheese on top of each stuffed pepper. Place in the oven and bake for about 25-30 minutes or until the peppers are tender and the cheese is golden and bubbly.
- Serve: Remove from oven and let cool slightly before serving. These stuffed peppers make an excellent main dish or side, served warm.
Notes
- You can add herbs like basil or oregano to the filling for extra flavor.
- For a richer filling, add an egg to bind the mixture before stuffing.
- To make it vegan, substitute ricotta with a plant-based cheese alternative.
- Serve with a side salad or crusty bread for a complete meal.
