Ingredients

Scale

Cake and Filling

  • 15.25 ounce strawberry cake mix (Betty Crocker recommended)
  • 8 ounce block cream cheese, softened to room temperature
  • ⅓ cup cream cheese chips, roughly chopped

Coating and Decoration

  • 2 bags (10 oz each) Ghirardelli vanilla melting wafers
  • ½ cup Wilton pink candy melts
  • ½ cup Wilton bright pink candy melts
  • Sprinkles (optional)

Instructions

  1. Preheat Oven and Bake Cake Mix: Preheat your oven to 350°F and line a baking sheet with parchment paper. Spread the strawberry cake mix evenly on the baking sheet and bake for 5 minutes to heat treat the mix, ensuring safety from any bacteria. Remove from oven and allow to cool completely on a wire rack.
  2. Prepare Cream Cheese Mixture: While cake mix cools, place softened cream cheese in a medium bowl. Beat on medium-high speed with a hand mixer until smooth and creamy.
  3. Combine Cake Mix and Cream Cheese: Add cooled cake mix to the bowl with cream cheese. Fold gently using a rubber spatula a few times to avoid mess, then beat with the hand mixer on medium-high speed until a dough-like consistency forms.
  4. Fold in Cream Cheese Chips: Evenly fold in the chopped cream cheese chips to the dough mixture.
  5. Chill Dough: Cover the dough with plastic wrap and refrigerate for 2 hours to firm up.
  6. Shape Truffles: Line two baking sheets with parchment paper. Use a 1½ tablespoon cookie scoop to portion dough and roll each portion into a smooth ball by hand. Let the balls rest for about 15 minutes to expand, preventing cracking during coating.
  7. Melt Vanilla Melting Wafers: Using a double boiler on low heat or a microwave, melt the vanilla wafers until smooth. Stir frequently and keep at an even temperature.
  8. Dip Truffles in Vanilla Coating: Place one dough ball on a fork and dip fully into melted vanilla wafers. Tap off excess coating gently and place coated balls 2 inches apart on a lined baking sheet.
  9. Apply Sprinkles: Immediately before coating dries, sprinkle desired amount of sprinkles on half of the coated truffles.
  10. Melt Pink Candy Melts and Drizzle: Melt the two types of Wilton pink candy melts separately in microwave-safe piping bags on low power. Cut a small piece off the tip and drizzle the melts over the remaining plain coated truffles for decoration.
  11. Set and Serve: Allow truffles to fully set and harden at room temperature before serving. Enjoy these festive strawberry cake treats!

Notes

  • Heating the cake mix before mixing kills any potential bacteria ensuring safety for no-bake cake truffles.
  • Allowing the rolled cake balls to rest before dipping prevents cracks in the coating.
  • The double boiler method for melting coating wafers helps maintain correct temperature and smooth texture.
  • You can swap sprinkles with other decorations for personalized looks.
  • Store leftover truffles in an airtight container in the refrigerator for up to 5 days.
