Ingredients

  • 2 cups of sliced organic strawberries
  • 2 cups of cubed organic watermelon
  • 2 cups of semi-thick cucumber rounds sliced in half
  • Handful of fresh mint leaves (basil also works nicely)

Cheese

  • 3/4 cup of crumbled goat’s milk feta

Seasoning

  • 1 tsp of sumac
  • Sea salt and coarse black pepper to taste

Balsamic Vinaigrette

  • Juice of 1 lemon
  • 1/3 cup of balsamic vinegar
  • 23 tablespoons of extra virgin olive oil or avocado oil

Optional Homemade Lemon Poppyseed Dressing

  • 3 tbsp of raw honey
  • 3 tbsp of white vinegar or apple cider vinegar
  • 2 tablespoons of extra virgin olive oil
  • 1 tbsp of lemon juice
  • 3 tbsp of real, full-fat mayo
  • 1 tbsp of poppy seeds
  • 1/2 cup full fat Greek yogurt

Instructions

  1. Prepare Ingredients: Slice the strawberries, cube the watermelon, and cut the cucumber into semi-thick rounds sliced in half. Gather fresh mint leaves and crumble the goat’s milk feta.
  2. Make Dressing: Choose your dressing option – either whisk together lemon juice, balsamic vinegar, sea salt, pepper, and olive or avocado oil for the balsamic vinaigrette; or combine raw honey, vinegar, olive oil, lemon juice, mayo, poppy seeds, and Greek yogurt for the lemon poppyseed dressing.
  3. Toss Salad: Place all the prepared fruits, cucumber, mint leaves, and crumbled feta into a large bowl. Add the sumac and pour the vinaigrette or dressing over the ingredients.
  4. Mix Well: Toss everything gently but thoroughly to ensure all ingredients are evenly coated with the dressing and the flavors meld together.
  5. Garnish and Serve: Garnish with extra fresh mint leaves. Serve the salad chilled and preferably right away to maintain freshness and prevent wilting. If not serving immediately, keep the dressing separate and toss just before serving.
  6. Optional Serving Suggestion: Enjoy with a glass of cold rosé for a perfect summer pairing.

Notes

  • Do not toss the salad with dressing until ready to eat to prevent wilting and fermentation.
  • Optional additions include mango chunks, pickled red onions, raspberries, fresh basil, goat cheese, burrata, mozzarella balls, asparagus, baby spinach, arugula, or massaged kale for variety.
  • Sumac adds a tangy, lemony flavor but can be omitted if unavailable.
  • The salad is best served cold and fresh.
