Instructions

  1. Prepare the crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes to set, then remove from the oven.
  2. Make the cheesecake filling: In a large mixing bowl, beat softened cream cheese with sugar until smooth and creamy. Add cooled coffee or espresso and vanilla extract, blending well to incorporate. Beat in eggs one at a time, ensuring each is fully mixed before adding the next. Avoid overmixing to prevent cracks during baking.
  3. Assemble and bake: Pour the cream cheese mixture over the prepared crust in the springform pan. Smooth the top with a spatula. Place the pan on the middle rack of the oven and bake at 325°F (163°C) for about 50-60 minutes, or until the edges are set and the center is slightly jiggly but not liquid.
  4. Chill the cheesecake: Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for 1 hour to avoid rapid temperature changes that might crack the surface. Then, remove from the oven and chill in the refrigerator for at least 4 hours, preferably overnight, to fully set.
