Ingredients

Scale

Crust

  • 2 ½ cups Oreo cookie crumbs (about 26 Oreo Cookies)
  • 6 tablespoons unsalted butter, melted

Cheesecake Filling

  • 16 oz. cream cheese, softened
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon strawberry extract
  • Pink food coloring, optional
  • 1 cup fresh strawberries, chopped

Topping

  • Heart shaped sprinkles, optional

Instructions

  1. Prepare the crust: Finely crush the Oreo cookies in a food processor until they become fine crumbs. Add the melted unsalted butter and blend until all the crumbs are moistened evenly.
  2. Form the crust: Lightly grease the edges of a 9-inch springform pan with cooking spray. Press the crumb mixture firmly onto the bottom of the pan to create an even crust layer. Place the pan in the freezer to set while preparing the filling.
  3. Puree strawberries: Place 1 cup of fresh chopped strawberries into a blender. Pulse until smooth and puree. Set the puree aside for the filling.
  4. Make cream cheese mixture: In a medium bowl, mix the softened cream cheese with powdered sugar until smooth and creamy, ensuring no lumps remain.
  5. Whip heavy cream: In a separate bowl, beat the 2 cups of heavy cream until soft peaks form. Add the strawberry extract and continue whipping until stiff peaks form.
  6. Combine mixtures: Gently fold the cream cheese mixture into the whipped heavy cream on low speed, just until everything is combined. Be careful not to deflate the whipped cream.
  7. Divide filling: Split the combined cheesecake mixture evenly into two separate bowls.
  8. Prepare strawberry layer: Add the strawberry puree and several drops of pink food coloring (if desired) to the first half of the mixture. Mix on low speed to incorporate the color and flavor completely. Pour this mixture evenly over the chilled Oreo crust.
  9. Add plain cheesecake layer: Carefully spoon the second half of the plain cheesecake mixture on top of the strawberry layer, smoothing the surface gently to avoid mixing layers.
  10. Refrigerate to set: Place the assembled cheesecake into the refrigerator and chill for at least 6 hours, or until fully set and firm.
  11. Release from pan: Once set, run a thin knife around the edge between the cheesecake and the springform pan sides to loosen. Remove the springform sides carefully.
  12. Decorate: Finish by sprinkling heart-shaped sprinkles over the top of the cheesecake for a festive Valentine’s Day touch.

Notes

  • For best results, chill the crust and filling thoroughly to ensure a firm cheesecake.
  • Use fresh strawberries for a vibrant natural flavor, but frozen can be used if fresh are unavailable—thaw and drain excess liquid before using.
  • Pink food coloring is optional and can be omitted for a natural look.
  • To crush cookies without a food processor, place them in a sealed plastic bag and crush with a rolling pin.
  • Ensure cream cheese is softened to room temperature for easy mixing and smooth texture.
