For the Lentil Patties

  • 2 cups dry green or brown lentils
  • 1 large potato, peeled

  • 1 cup chopped fresh parsley
  • 12 tsp paprika
  • 1 tsp ground cumin

For the Sandwich Assembly

Instructions

  1. Cook the lentils and vegetables: Add the lentils to a large pot. Place the whole peeled potato, onion, and carrots on top. Cover everything with water, season lightly with salt, and cook over medium heat until all ingredients are soft, approximately 25–30 minutes.
  2. Mash everything: Drain any excess water from the pot. Mash the lentils, carrots, onion, and potato together inside the pot until the mixture is mostly smooth but retains a slight chunkiness for texture.
  3. Make the mixture: Transfer the mashed mixture to a large bowl. Add breadcrumbs, chopped parsley, paprika, ground cumin, salt, pepper, and chili flakes if using. Mix thoroughly until the mixture holds together well. Add additional breadcrumbs if necessary to achieve a firm consistency suitable for shaping.
  4. Shape patties: Using your hands, form the mixture into oval or square patties by pressing firmly to compact the mixture so it holds its shape during cooking.
  5. Fry: Heat a sufficient amount of oil in a pan over medium heat for shallow frying. Fry the patties on each side until they develop a golden brown color and a crispy texture, ensuring they are cooked through, about 3–4 minutes per side.
  6. Assemble sandwiches: Slice the Turkish-style rolls or pita bread horizontally. Spread a generous layer of the yogurt-based tzatziki sauce inside. Add fresh tomato slices, the onion and parsley mix seasoned with sumac, arrange 3 to 4 lentil patties inside, and top with grilled green peppers and pickles if using. Press lightly and serve warm for the best flavor.
